For more than 15 years, the Maestro Martino Food Academy has been carrying out an ongoing and systemic activity in which to converge experiences, reflections, testimonies, and from which to draw insights for the catering of the future. An international stage for the entire gastronomic and restaurant universe and a concrete way to train a new generation of chefs and restaurateurs and to support the entire supply chain. A veritable nerve center of knowledge of Italian and foreign chefs who meet to compare and enrich each other, with the ultimate goal of transferring their skills to young culinary talents.

OUR MODELS


 

The Academy operates by implementing two models that pursue two different purposes: an educational model and a social model.

The educational model


The MMFA networks skills and knowledge from different sectors: from cooking to baking, from agriculture to artistic and technological crafts. These experiences converge and take shape within two teaching restaurants, as well as in workshops and research and production projects.

The teaching restaurant is a real restaurant open to the public, run by professionals, where students actively participate in all operational functions. It is also a place where the beauty of Italian craftsmanship in all its forms is celebrated every day through art exhibitions, events, charity auctions, meetings and concerts.

From this intuition was born the TOG Bistrot project, developed in collaboration with the TOG Foundation of Milan, which specializes in the care and assistance of children with complex neurological disorders. The bistro aims to combine quality gastronomic offerings with the promotion of social inclusion and the education of future generations. Every detail-from spaces to hospitality, from cuisine to services-reflects an idea of accessible and shared beauty. Proceeds from Tog Bistrot help support the activities of the TOG Foundation.
